Today I’m cooking up a turkey and we’ll be bringing a Thanksgiving meal to Great Grandma Verna tomorrow (she’s 103!) but we’ll keep most of the turkey at home to use over the next week.
For our official Thanksgiving feast, we’ll get together with friends and family at my Aunt’s house tomorrow. I’m always looking for new ways to use leftover turkey and I rounded up 20 scrumptious looking recipes, a few of which I’ll definitely try.
1. Turkey and Mushroom Risotto
3. Turkey Pho
4. Turkey Cranberry Monte Cristo
* I also love my southwest white bean chili too!
6. Rosemary Hummus Turkey Wraps
8. Rosemary and Turkey Squares
10. Turkey Chopped Salad with Avocado Dressing
*or my sour cream enchiladas, yum!
13. Crunchy Turkey Salad Sandwiches
17. Turkey Pita with Cranberry Salsa
18. Open Faced Turkey Sandwiches
20. Turkey Pot Pie
And now I’m sooooo craving turkey, are you? :)
I’m off to celebrate with family for the next couple of days – I have a lot to be thankful for this year, the list is long, but mostly I’m grateful for good health and the comforts of home, which we all know so many are without. I’m also so thankful for all of YOU who visit here, you inspire me to keep this conversation going. Thank you for sharing your comments, your lives, your tips, your makeovers, and your funny stories with me.
Sending you all wishes for a beautiful Thanksgiving filled with delicious food and the love of friends and family!

Thank you for rounding up so many great ideas for turkey leftovers. Yum…now I really can’t wait for tomorrow! My husband will be continuing his tradition of cooking the turkey out on the grill. The down side is that it’s so tasty that there’s usually no leftovers. Have a wonderful Thanksgiving!
Thank you, Kate for the endless inspiration ~ your diy projects, your generous spirit, sharing your success tips and encouragement, and of course that turkey pot pie….YUM! Wishing you a wonderful time with your family!
Thank you Pam, enjoy your holiday!
